The Black Salsify, aka the oyster plant, has a deeper salsify flavor than the normal salsify. These are a root crop and you can expect them to take at least 100 days. Will store for a good while. To our farmers market friends, these are rare; you will be the only one at the markets with these! This is another beyond organic, Non-GMO, Heirloom, and open pollinated variety that we are proud to carry. Happy growing!!!
